THE STOCKFISH

The stockfish is Arctic cod (Gadus morhua) caught and preserved for drying.


Habitat

In the months of January to March, cod leaves its habitat, and from Barents Sea comes to Norway off the Lofoten Islands to lay eggs.

Here it is fished and immediately brought to the ground for processing.

The selection

For the stockfish selection, in Norway, the task is the "vrakeren" stockfish breeder, who touches, touches and smells the fish, identifying the best qualities, dividing it into about 20-30 different classes.

Curiosity

News on the stockfish in Italy says it was used as a commodity, imported from the Nordic countries in 1561 in Genoa, Venice and Naples.

The import of dry cod in Calabria from the port of Naples dates back to the beginning of the year 500.

Storage

The natural drying of the stockfish remains one of the oldest preservation methods.
The fish is prepared immediately after capture, thanks to optimum climatic conditions.
After having it decapitated and cleaned, it is hanged on A-shaped wooden racks and left to dry outdoors for about three months from February to May.
In order to complete the drying process, cod is removed from the racks and left to rest for another 2 to 3 months in the closed area in a dry and aerated environment.
At the end of the drying season, the "stockfish" has lost about 70% of its original water content but has maintained its nutrient principles.
Stockfish is a food rich in protein, vitamins, iron salts, oed fat is poor in fat.
The stockfish is similar to the appearance of cod, but it has a completely different flavor and differs from that which is preserved by salting.
